Mitsutoshi Shimabukuro is a Japanese manga artist best known for creating the popular manga series "Toriko". He was born on May 19, 1974 in Okinawa, Japan.

Shimabukuro began his career as a manga artist in 1996 with his debut work "Seikimatsu Leader Den Takeshi!", which was serialized in Weekly Shonen Jump. He later went on to create "Toriko", a manga series about a gourmet hunter in a world where the most delicious ingredients come from dangerous and exotic creatures. "Toriko" was serialized in Weekly Shonen Jump from 2008 to 2016 and was adapted into an anime series.
